Mini Oatmeal Pies

Last night I made Mini Oatmeal Cream Pies with some good friends.  They were de-li-cious!  (And pretty healthy, too!)

Mini Oatmeal Pies
1 cup butter, softened
1 cup Splenda
2 large eggs
1 teaspoon vanilla
1 1/2 cups whole wheat flour
1 cup quick oats
1 teaspoon cinnamon

1. Cream butter and Splenda together in mixer.
2. Add eggs one at a time and blend.  Add vanilla and mix in.
3. Add flour, oats, and cinnamon.  Mix til combined.
4. Make small balls and place on cookie sheet. Flatten with the bottom of a cup.
5. Bake at 375 degrees for 8 minutes
Filling:
8 ounces fat free cream cheese
1-1 1/2 cups Splenda

1. Cream Splenda and cream cheese together in mixer.
2. On the bottom side of a cookie, top with filling. 
3. Put another cookie on top to make a sandwich.
